Let me introduce myself...
My names April and I’m the gal behind The Nourish Co 🌱 I turned vegetarian at the age of 6, vegan at 19 and have now been vegan for almost 10 years! I’ve always loved food and would call myself an intuitive eater - I eat what I fancy and put together whatever I feel like trying! 🧙🏻♀️ I enjoy cooking freely and not being tied to a recipe, so one of the things I’d like to do is share tips & tricks to help others get more confident & creative in the kitchen! There really are no rule! But right now, I’d really like to share how easy & accessible a vegan diet is and how you can make a quick healthy meal... even when you’re tired or tight on time!
So last night I had one of those accidental naps which put me out of whack a little, so with my lacking of energy I created this super easy 15 min meal with a little help from an Aldi curry kit! 👌🏻
Thai Noodle Soup - Serves 2
Aldi Thai Green Curry Kit x 1
1 tsp coconut oil (or your choice of oil)
250ml vegetable stock
1 tsp soy sauce or tamari
1 tsp rice vinegar or mirin
1/2 head brocolli
1 block of smoked tofoo
Handful of spinach
2 person serving of any of your choice. I used udon for speed this time!
1 tsp vegan oyster sauce
Black sesame seeds
Heat the oil in a frying pan, add all of the curry paste and a tablespoon of the coconut milk. Heat for a couple mins before adding the tofu & vegetables, followed by the rest of the coconut milk. Next add the herb mix (from the curry kit), stock, soy sauce, rice vinegar & vegan oyster sauce (if using). Let cook for 10 mins or until the vegetables are cooked how you like them! Add the cooked noodles of your choice, serve, add toppings if you wish and enjoy! ☺️
Chop the veg however you bloody wish...there’s no right or wrong!
P.s This meal cost me less than £5 (for 2) But that cost could further be reduced by ditching the tofu! So whatever works for your budget!
